I have dictionaries of phone book size, a 2 volume English to German (not up to date but also without purging the old words as more modern ones do) and a less outdated that works in both directions. Other wise I use dict.leo.org (but that can be tricky because it is low on context) and some other pure English web resources (urban dictionary etc.). Wkipedia can be useful, if a term is available in both German and English.

The standard German word for humble would be "bescheiden" and covers more or less the same area as the English word (there is even an exact equivalent to IMHO with the same implication of unhumbleness "Meiner bescheidenen Meinung nach").
Knurrhähne sind eßbar aber empfehlen würde ich das nicht unbedingt.
The aspitriglos is edible though I do not actually recommend it.
