That unicorns are horned horses is by no means a uinversal belief. And imo knowledge of rhinos had no influence on the unicorn idea.
Caesar's description of unicorns (if the text is genuine and not added in th early middle ages) says that they look like deer and that the horn is forked at the tip (cyryptozoologists may speculate that synthetoceras or a relative was still around and that Caesar got the description of one of the last specimens).

My first Latin prof at the university believed that this chapter of the Bellum Gallicum was not by Caesar but added later by either a jokester or another gullible person in the early Middle Ages.
