It would ease some problem but carry with it a lot of others like muscular atrophia.
I guess the ideal would be an enviroment where one could change the level of gravity without effort.
Technically that could be a very, very large rotating space station. G forces grow from the center outward.

Would only work with active cooling. The problem is known from rocket engines where the rocket fuel on its way to the combustion chamber is used to cool it and the nozzle. That way the temperature in the chamber can be higher than the melting point of the walls.

It would likely be easier from the South Pole because it's on land, otherwise one should start from both ends.
Since it is digging a tunnel through the center of a sphere, any supporting sideshafts would take at least as much effort as they woud save.
