I rather think UU wizards are autotheists.  Some regard themselves as little gods.  There are some pretty small gods in Discworld that I should think a powerful wizard might outclass.

Pratchett explicitly states that the wizards tend to be atheists ('like most wizards, Ponder Stibbons was an atheist'). They can afford it because they can defend against the regular lightning strikes (and the UU is fitted with lightning rods).
The most prominent Discworld atheist is Dorfl the golem. The gods hate him since he is ceramic and thus lightning proof. On the other hand the Omnian missionaries are delighted because he is the only one reading their pamphlets and willing to discuss them.
