We have a recomendation thread, now a things-to-avoid.

1. Do not cook nasturtiums. They taste nasty.

They are supposed to be eaten raw... at least the leafs and flowers the seeds however can be pickled and used in the same way as capers.

Trying to fry mushrooms (chantarelles) in cooking oil instead of butter isn't a hit either, unless one wants  it to become little popped charcoal pieces.

Butter has quite a bit of water....it's what "clarifying butter" is all about.

But, more importantly, the water keeps the temperatures down, and mushrooms are pretty delicate and heat-sensitive.

Oil just gets hotter and hotter....eventually burning at or around 450F or so (depending on the oil-- some go over 700+ before smoking).
Sometimes, the real journey can only be taken by making a mistake.

Yes, and getting rid of the milk protein that coagulates and get burnt and nasty when the temperature gets to high.
