They also liked to put spices and honey into it.

Hmm, a smoked grape red (perhaps a Pinotage? Like dark roast coffee) sounds quite lovely, especially as a cooking wine.  Rauchbiers can be quite nice, though... and also good for culinary use.

Started dabbling with home brewing, beginning with hard apple cider last fall (which turned out well), and currently with small batches of sodas... yeast carbonated but not necessarily alcoholic. Currently working on a birch syrup soda which is quite lovely, and I might let the end of that batch ferment out to see what birch wine (primarily fructose based) tastes like. It's getting to be time to tap the trees again, so I'm using up old supply and creating some motivation for a new harvest.

Last I've smoked salmon in the past, but it's rather hard on the lungs. Post

I did an alcoholic fermentation experiment in my chemistry class recently. Just sugar, water and baker's yeast (from the grocery shop).
It worked but I would not dare to drink any of the product. I distilled a bit off and there is ethanol in it but by smell I can tell there is at least one more (my bet would be on methanol and probably one other).
That's the problem: I have knowledge enough to become paranoid but not enough to confidently produce something that would be safe to consume.

Last fortunately, I can do very well without regular consumption of alcoholic beverages, and acceptable cider is cheap, if I feel the urge Post

I can tell the difference between cheap wine and medium priced wine.  But I had some really expensive wine once and couldn't say it was any better than the medium priced stuff.

Pretty much the way it is, with the wine that is legitimately better the difference with the medium priced stuff is minuscule, and in some cases there isn't a difference.
