So long there is a buffer between the data and the outside, the outside can be polished if needed.

It's form stable but still can and will undergo changes that may limit it as a secure longterm data storage material. Glass (the transparent stuff we traditionally make windows out of) interacts with the environment although less obviously so than e.g. metal. But the degree and type of interaction depends on the type of material (here we go into the 'state not substance' part).
