To be honest, I did not aurally notice a difference the last few times I saw ballet on stage.
The last time it was actually a mix with two actual musicians on stage (as part of the act) but the orchestra canned.

It's noticable close to the pit due to the lack of sound distribution.
Slight correction to the previous post: only one musician was on the stage, the other played the harpsichord in the pit. His live presence could be noticed through the directional effect.
As for the unpayed musicians, that depends on the contract. Over here opera houses can still be run as ensembles with a fixed income for the basic work.
Generally I prefer a live orchestra too but am willing to accept a rare exception (the dancers still were real  )

I wonder what would dancers say if a symphonic orchestra decides to play a ballet and put pre-recorded dancers on a screen for the paying public.

It's a misperception that the old silent movies were b/w. It was the talkies that abandoned coloration.

The movies may have been coloured, but they would show up as B&W on TV at that time.

They often still do since not all film have survived in viraged or stencil coloured form or the b/w copies are cheaper to rent.
