I have no objections to horsemeat, although admittely I have to my knowledge never eaten any.
The idea that horsemeat is somehow unsuitable for human consumption seems to have been a Roman Catholic one from the Middle Ages. The pope officially banned it for all Christians for some windy, incomprehensible reasons and thus the European tradition died.

In the Chinese case there was donkeymeat and iirc the suspicion of diverse other animals (weren't storks involved too?)

It was not uncommon to ride oxen in the past and the ban on horsemeat seems not to have applied to mules either (although the latter may have been a later concession). As far as elephants are concerned, they are also known in Latin as 'boves Lucani' (Lucanian oxen)

Even Rome is now mostly beyond the Middle Ages.

Not much more than a century ago the RCC still condemned all forms of banking as usury, now the Vatican has its own (corrupt) bank and the popes were until now not very successful in keeping it under control.

The answer is subcontracting. That's one reason why the Papal State tolerated the presence of Jews. They got humiliated and mistreated but not by decree completely evicted (as in Britain, Spain or later Norway).

Like Iran today Catholic Europe had a banking system that pretended to work without charging interest (usury being condemned by both Bible and Quran). As in so much else the line between mortal sin and fully agreeable to G#d runs through the ledger books. All a question of proper bookkeeping (cf. ducks classified as fruit/veggies and capybaras as fish).
