At least originally brain must have been a main ingredient in saveloy. Don't know about today.
But we should not forget that sausage in general was originally just a way to turn even the least attractive parts of an animal into 'proper' food.
Bismarck did not compare sausage and policy making for nothing and described them as things better not observed being made.
