The epic unfortunately gives no close description of Grendel and Grendelmom, so resemblance to the mutant from the wet biome cannot be checked.

That would not explain the fact that his (Grendel's) skin was impervious to iron (swords etc.).

That's a plot point. Another one (though not expliciteldy stated) is, that his arm gets torn off not by Beowulf's intention but because Grendel tried to escape while Beowulf held him (with the stated intention to capture him alive). Thus it is a self-inflicted (fatal) wound.

There are several historic characters acting in Beowulf and others get mentioned by narrator or characters.
Apart from their alleged descendance from Cain, we learn nothing about the origin of Grendel and Grendelmom.
Iirc there is not even any info on their size. They usually get depicted as huge but they could as well be human-sized and just incredibly thickskinned.
