Enough that the economy of whole cities depended on them. And some places only became important and bigh through their universities.
On the one hand universities shifted the balance from monasteries towards cities, on the other universities played a large role in both church and worldly policy/politics. One might say university professors were never more powerful than in the late Middle Ages and early modern era.

No, that one is completely harmless.
It may be one of the least bawdy/unruly drinking sngs there is.
Admittedly there are some lines I do not fully understand either. Student slang from 200 years ago I presume.
One stanza can be understood as a friendly hint that drinking and women do not mix well and should be separated. If your love rejects you, you may drink instead but if she doesn't, you better keep sober (or it may become the very reason for the next rejection).

The first numbers I find say that there were only 12000 students in Germany in 1840
(1930: 100K; 1980 1 Mio; today about 2.2 Mio).
