You are the chemist, answer this, if a body is incinerated the water will be in the smoke, now the question is how easy (or difficult) is to reclaim that water (and separate it from the CO₂ and other gases)?

That's the easiest part for there are several possibilities. The water can be reclaimed simply by installing a cooltrap (not to be confused with a caltrop). It could also be absorbed physically or chemically (molesieve or salt that has been freed of crystal water).
CO2 can also be removed by dry absorption (about any hydroxide will do) but some of the water would get lost that way.
The problems are the other gases. If there are sulphur or nitrogen compounds, those could be water soluble (e.g. SOx, NOx or NH3). To get those removed reliably could take several complicated stages and lots of energy.
All depends on the volume of course too.

How about blood? If you remove it all from a body (still plenty of water in the organs but bear with me) how difficult it is to extract the water? OTOH, how hard it is to liquefy soft organs?

Dialysis (as long as it is not yet congealed)
Depending on conditions also pervaporation, reverse osmosis and other memebrane techniques.
In hard cases just distill it after a good turn in the centrifuge.

Coal gets liquefied and gasified all the time and a lot of money is invested to get it more efficient.
But they have to ADD water to achieve that.
