Heehee! Thanks! So far, I'm having fun... and just today I realized that I'm probably getting tons of vitamin C from my cranberry juice and the lemons I put in my vodka sodas...

Hmmm.... do you have a meat grinder?  They are very very handy for getting interesting ingredients into burgers (although a food processor will work just as well if you are buying pre-ground beef).  I have a bit of a hang-up with how many cows go into any package of industrial ground beef, so I grind my own, but getting meat from a butcher or good supermarket that grinds their own from scraps is a reasonable alternative.

Are you sticking specifically to beef, or are other meats fair game? 

Would love to help bounce ideas for recipes if you need to work any out; the Thai idea sounds reasonably easy (lemongrass or red curry would be easy to incorporate) if you can find a cheese that matches well. Or how about a bahn mi inspired sate' beef Vietnamese cheeseburger?  Cheese shows up on many versions, and at least you could load that one up with veggies and still stay traditional-ish. Or perhaps an Ethiopian burger seasoned with berebere and wrapped in injera.

I have a weakness for Jollibee (Filipino burger chain that pwns McD's in its home country and is invading the US, mostly CA) - it's partly the mascot, partly nostalgia and partly the ginger and soy sauce that they season the patties with.

You've obviously never had a meal at my parent's place - it's considered polite breakfast conversation.

I don't think we have Jolibee out here... sound nommy! I'm open to various forms of cheeseburger but I am set on keeping it red meat almost all the time. Seems cheating if, say, I switched to salmon. Recipes are welcome! I do have a meat grinder, but I will more likely simply knead any seasonings into pre-ground meat with my hands.

Well, I recently made Morrocan meat balls, which could easily be adapted to make hamburger patties.  IIRC, the ingredients were ground lamb, some white bread soaked in milk and then squeezed out, cumin, cinnamon, coriander and some other stuff i can't remember right now.  If you're interested I can dig out the recipe tomorrow and post it here.

That sounds utterly delicious! It would be so good with some feta and tabouli.

Minced chickpeas are quite usual as a base in vego patties.
